- High-protein bread flour.
- Vital wheat gluten.
- Baked baking soda
- 1/2 tea spoonful of salt
- Water
One of the reasons why you should probably, try out this recipe is that fresh noodles are more preferably compared to the dry ones. The homemade versions is even more healthier compared to the commercial ones as there no hidden preservatives or flavourings.
The other pro’s of this recipe is that it very easy to make, with a very few ingredients required. Also, alkaline noodles stay in shape very well and don’t become sticky over time, so you can make them in large vloume and preferably cook them when you have time.

Core ingredients
- 6g baking soda.
- 1/2 tea spoonsful salt.
- 160ml water.
- 400g bread flour.
- 4g vital wheat gluten.
Procedure
- Make an alkaline water solution.
- Mix flour and alkaline solution in a large mixing bowl.
- Rest the dough for 30 minutes at a room temperature.
- Knead the dough for two to three minutes.
- Roll the dough flat with a pasta machine.
- Continue rolling the dough through the pasta maker until desired thinness.
- Cut dough into long strips of noodles with pasta machine
- Simmer noodles in boiling water.

9. Serve with desired veggies, meats and broth.
